Barbecued Ribs:

2 pounds ribs
2 tbsp vinegar
2 tbsp butter
chopped onion or onion soup mix
1 cup water
1 cup ketchup
2 tbsp lemon juice
2 tbsp Worcestershire sauce
2 tbsp brown sugar
1 tsp mustard
salt & pepper
Brown ribs in oven .In a sauce pan combine all ingredients , let simmer for 15 minutes then pour over ribs . Cover and bake at 400 for 1 hour until ribs are tender .
Stuffed Peppers:

3 large red peppers
1 lb browned hamburger meat
Stuffing:
1 large can of diced tomatoes
1 bay leaf
1 can tomato paste
1 tsp curry
1 tsp chili powder
1 cup cooked rice
1 diced onion
3 tbsp soy sauce
1 tsp minced garlic
In a pot bring to a simmer garlic , soy sauce , tomato paste, diced tomatoes ,chili powder curry , bay leaf and simmer for an hour . Remove from heat .Add cooked hamburger meat and rice to sauce mixture.Cut a circular hole in the top of the peppers , Scoop out the seeds from the peppers with a tablespoon fill up the peppers with the hamburger sauce mixture.Place peppers in a casserole dish when filled add remaining mixture in the pot with the peppers .Bake at 350 for 45 minutes .
Stuffed Meatloaf:

2 pounds lean groundbeef
1 1/2 cups bread crumbs
1 cup grated cheddar cheese
3 tbsp milk
1 tbsp garlic powder
1 tbsp onion powder
2 tbsp soy sauce
salt and pepper to taste
1 cup chopped spinach
few slices ham chopped
2 eggs
1 cup ketchup
Mix garlic,powder,soy sauce, ketchup , hamburger eggs ,bread crumbs and milk .Roll out flat then layer the spinach , ham and cheese and roll it up . Place into a loaf pan and bake at 375 for 40 to 50 mins .
Shepherd’s Pie :

2 cups diced roast beef or 2 cups ground beef
2 tbs flour
2 tsp oil
1 3/4 cup water
1 tsp soya sauce
1 envelope onion soup mix or diced onion
2 cups frozen vegetables thawed
1 cup green peas
1 cup corn
The Top :
2 tbsp butter
2 cups sliced potatoes
2 cups boiling water
salt and pepper to taste
1 cup cheddar cheese grated
In a sauce pan add oil and onions ( or onion soup mix) cooked until golden brown then sprinkle flour over the top . Add water let simmer until thickened , next add soya sauce stir in all vegetables and meat . Pour into a casserole dish .
Topping : In a pot bring water to a boil add butter, and salt and pepper. Next stir in potato slices and cheese spread evenly over beef mixture . Bake at 350 for 40 to 45 mins uncovered .
Sweet and Sour Meatballs :

1 lb ground beef
1 tsp garlic spice
1 tsp onion powder
2 tbsp soy sauce
1 large egg
1 cup bread crumbs or crushed crackers
Mix together all above ingredients roll into balls .Bake at 350 for 30 min.
Sweet and Sour sauce :

2 tbsp brown sugar
1 tsp mustard
1 tbsp vinegar
1 tbsp Worcestershire sauce
1 tbsp cornstarch
1 cup water
add all ingredients into a sauce pan let simmer for 5 mins pour over cooked meatballs then cook for 10 more mins .
Lasagna :

1 box oven ready lasagna noodles
1 1/2 lbs browned hamburger meat/ or cooked chicken breast
1/4 cup soya sauce
1 tbsp garlic powder
1 can of tomato soup
1 bottle of tomato sauce
1 can tomato paste
2 cups of grated cheddar cheese
1 1/2 cups grated mozzarella cheese
Parmesan cheese
1 pkg onion soup mix
In a saucepan add cooked hamburger meat , tomato paste, tomato sauce ,soya sauce ,garlic and onion soup mix simmer for 45 mins .Place one layer of lasagna noodles in the bottom of a 8 by 10 pan then add a layer of spaghetti sauce mixture and cover with a layer of the 3 cheeses continue adding noodles , sauce and cheese until all sauce layer by layer until all sauce is used . Bake at 350 for 40 mins or until noodles are soft .
Easy way to remember later with noodles , sauce and cheese until all fixings are used .
Sweet and Sour Ribs :

3 lbs short ribs
2 tbs oil
1 diced onion or onion soup mix
2 tsps salt

Brown ribs in fat and diced onion. Blend remaining ingredients together in a mixing bowl .Pour over browned ribs , cover and bake at 350 for 1 1/2 hours or until ribs are tender .
Yorkshire Pudding :

2 tbsp beef drippings or butter
1 cup flour
1 cup milk
2eggs
1 tsp salt
Mix flour , salt , milk and eggs until smooth .Grease muffin tins with butter or beef drippings .Drop by spoonfuls into muffin tray .Bake at 375 for 20 to 25 mins or until golden brown .My first attempt was a fail but i tried again and they came out much better .
Baked Spaghetti with meatballs :

1 pkg spaghetti noodles cooked and drained
1 lg pkg ground beef cooked and drained
1 tbsp onion powder / onion soup mix
1 lg jar or can of sauce
10 cooked meat balls
1/2 cup Parmesan cheese
3 cups shredded cheddar cheese
In a bowl add cooked ground beef and onion powder or garlic powder what ever you like . In a dish add a layer of noodles on the bottom pour in some of the meat sauce .Keep doing this until all spaghetti and sauce mixture is gone .Place meat balls on top cover with cheddar and Parmesan cheese.Bake at 350 for 20 mins . Sometimes I place the the spagetti and meatballs in a casserole dish smother with cheese and when the cheese melts is done .
Goulash :

4 cups cooked elbow macaroni
1 pkg cooked ground beef
1 can of tomato paste
1 1/2 cups ketchup
1 tsp onion powder
1 tsp garlic powder
1 can diced tomatoes/ fresh diced tomatoes
Mix all together while hot and serve .
Egg and Spinach Stuffed Meatloaf :

2 lbs ground beef
1 cup breadcrumbs
2 eggs
3 tbsp Parmesan cheese
1 tsp parsley
2 tsp garlic powder
2 tsp onion powder
salt and pepper to taste
2 cups spinach
4 boiled eggs
1 cup grated cheddar cheese
Mix first 8 ingredients together in a bowl .
Place half of the mixture in a loaf pan spread out so there is a hallow in the middle place spinach all around the sides of the pan .Next place eggs in the middle then cover with more spinach over the top.Next place remaining hamburger mixture over the top and then add grated cheese .Bake at 350 for 1 hour. I used spinach from the garden and it was delicious.
Stuffed Bell Peppers;

2 cups cooked rice
4 or 5 bell peppers
2 lbs ground beef browned
basil leaves
2 tbsp Soya sauce
1 tbsp garlic powder
2 tsp Italian spice mix
salt and pepper
1 can tomato paste
4 diced tomatoes
1/4 cup oil
Remove the seeds from the peppers by cutting a circular hole in the top .Mix together all ingredients in a bowl .Place peppers in a casserole dish, stuff peppers with the rice mixture .When all stuffed put leftover mixture in the bottom of thecasserole dish .Bake at 350 for 30 t 40 mins or until peppers are tender .
Meatballs :

2 pounds of lean hamburger
1 envelope of onion soup mix
1 tbs soy sauce
2 eggs
1 cup bread crumbs or cup of cooked rice
Mix all together and form into balls and place in a roasting pan.Bake at 350 for 45 mins or until cooked .Any type of sauce can be used on the meat balls .If you find the meatballs are too soft then add more bread crumbs .
Teriyaki Beef Stir -Fry :

3 tbsp cooking oil
2 steaks any kind will do cut into thin strips
2 tbsp cornstarch
1 red , yellow and green peppers sliced into strips
2 green onions diced
3/4 cups teriyaki sauce
1 carrot thinly sliced
couple heads of broccoli diced
salt and pepper to taste
1/4 cup pineapple with juice
In a wok or large frying pan pour in oil then add cut cup steak , roll each piece in the cornstarch sprinkle with salt and pepper .Cook until tender about 4 mins on each side then remove from the pan in the pan toss in the pepper , onions ,broccoli and carrots cook for about 3 mins then add in pineapple and teriyaki sauce .Let simmer for another 3 mins then add beef back in stir well .Serve over rice .
