Buffalo Chicken Ranch Balls:

4 large chicken breast cooked and diced
1 tsp hot sauce (optional)
2 tbsp ranch dressing
1/4 cup melted butter
1 1/2 cups grated mozzarella cheese shredded
1 tsp parsley for garnish
1tsp garlic
1 tsp onion powder
2 tubes crescent/ biscuit dough
In a bowl mix chicken, butter , hot sauce , ranch dressing and spices in a bowl .
On a baking sheet ( greased /parchment paper) place dough on sheet . In a separate bowl mix melted butter and parsley.
Cut into squares place a scoop of chicken mixture on to the dough .
Place a layer of cheese on top . Form into balls use the butter and parsley mixture to rub over the top of the balls.
Bake at 350 for 20 to 25 mins .

Roasted Chicken with Glazed Carrots:
8 chicken breasts Or a full chicken
1 bag of baby carrots
2 tbsp malt vinegar or regular vinegar
3 tbsp honey
1 tbsp rosemary and a pinch of paprika
salt and pepper to taste
2/3 cup butter melted
1 diced onion or onion powder 1tbsp
Place chicken breast and carrots in a casserole dish mix rest of the ingredients in a bowl pour over the chicken and carrots .Bake at 400 for 35 mins covered then remove the cover and turn heat to 350 for 20 minutes .

5 boneless chicken breasts
bread crumbs enough to roll chicken in about 2 cups
1 can or bottle tomato sauce
1 cup grated mozzarella cheese
1/3 cup italian dressing
In a shallow dish pour dressing in it and dip the chicken breast next roll chicken in bread crumbs , do the same for the rest .Place on a lined cookie sheet bake at 350 for about 20 mins turn over and 20 mins on the other side .Remove from the heat, pour sauce over the top and sprinkle with cheese bake for about 2 mins enough to melt cheese.
Chicken Teriyaki :

4 or 5 boneless chicken breasts
1/4 cup soy sauce
2 tsp ground ginger
2 tbsp brown sugar
1 diced green onion
2 tbsp cooking sherry
Use a mallet to flatten chicken , in a bowl mix ginger , sugar , soy sauce and sherry .Marinade chicken in the mixture for 30 mins .Remove chicken and place on a greased dish broil on high for about chicken for about 10 mins or until chicken is no longer pink.
Savory Chicken casserole :
4 medium chicken breast
1/2 cup sour cream
1 can of cream of chicken soup
1/2 cup butter
1 can of condensed chicken broth
1 box of stove stop chicken stuffing
Boil chicken for about 10 mins shred chicken ,place in a casserole dish.Mix : soup,broth,stuffing, butter and sour cream together .Spread over top of chicken .Bake at 350 for 30 mins .
Chicken and Rice casserole:

1/4 cup oil
1 teaspoon turmeric
1 onion chopped
2 1/2 cups hot water
1 teaspoon garlic powder
1 cup chicken broth
4 chicken breasts boiled
1 1/2 cups of uncooked rice
1 cup grated mozzarella or cheddar cheese
1/2 teaspoon salt
1/2 teaspoon pepper
In a frying pan add oil , onion and garlic.Stir over medium heat until browned. Add salt and pepper place in a casserole dish .Sprinkle rice over chopped cooked chicken then add consume, hot water turmeric and salt pour over rice . Add cheese to the top . Cover and bake at 375 for 45 mins.
Chicken Cordon Bleu:

5 chicken breasts semi cooked and cooled
10 slices of ham
1 1/2 cups bread crumbs
2 tsp parsley
4 tbsp parmesam cheese
1 tsp garlic powder
4 slices Swiss cheese/ or mozzarella chees
1 tsp onion powder
5 tbsp melted butter
Combine all dry ingredients in a bowl mix together .Pound chicken until thin , lay a slice of ham and cheese on top of each chicken breast then roll up and secure with toothpicks.Dip rolled chicken breast into melted butter then roll in bread crumbs .Place in a casserole dish and bake at 350 for 40 mins .Always soak toothpicks in water before using them so they don’t burn in the oven .
Sweet and Sour chicken balls:
Batter :
2 cups flour
2 eggs
3 teaspoons baking powder
salt and pepper to taste
1 1/2 cups milk
2 tablespoons sugar
1/4 cup of cornstarch
Mix all ingredients except baking powder ,when mixed add baking powder, 2 large chicken breast diced into cubes ,dip cubed chicken into batter deep frying hot fat until golden brown.
Sweet and sour sauce :
1 cup ketchup
1/4 cup vinegar
2 cups water
cornstarch
1/2 cup sugar
1 tablespoon soy sauce
Sweet and sour sauce :
In a saucepan combine ketchup , vinegar,water , soy sauce and sugar bring to a boil.Thicken with cornstarch
(.To use cornstarch put in a cup and add about 1/2 cup water )
Honey Garlic Chicken Wings ;
Chicken wings
1 teaspoon mustard
1 cup brown sugar
1 teaspoon garlic powder
salt & pepper
2 tablespoons soy sauce
1 tbs corn syrup
Mix mustard and brown sugar together ,Marinade chicken wings or an hour in sauce . Mix corn syrup and soy sauce pour over the top of the wings .Bake at 350 for 2 or 2 1/2 hours .
Moms best Sweet and Sour Chicken Balls :

cornstarch
1/4 cup vinegar
2 cups hot water

Oven Barbecued Chicken Breast:
3 tbsp oil
1 tbsp mustard
1 diced onion
5 chicken breasts
3 tbsp brown sugar
1 tsp chili powder
1 cup ketchup
1 tbsp Worcestershire sauce
1/4 cup lemon juice
In a sauce pan add oil , onions stir in brown sugar remove from heat .Add in ketchup , vinegar , Worcestershire , mustard and chili powder .Place chicken breast in a casserole dish .Bake at 350 covered pan for 1 hour .
Angel Hair Pasta with Chicken :

2 tbsp oil
1/4 cup Parmesan cheese
2 chicken breasts cubed
1 diced carrot
1 tsp basil
2 cups broccoli
1/2 cup chicken stock or broth
2 tsp garlic
12 oz angel hair pasta
In a skillet place oil and chicken until cooked .Remove from skillet .In same pan bring water to a boil add carrots cook for 5 mins then add broccoli .Cook pasta add chicken broth add basil and cheese . Drain when cooked . Place chicken and veggies on top of pasta and serve.
Baked Garlic Brown Sugar Chicken :
5 boneless chicken breast pre cooked
1 tsp garlic
5 tbsp brown sugar
3 tsp oil
Mix garlic , oil heat in a sauce pan for 5 mins then add brown sugar .Put chicken breast in a casserole dish and pour over the brown sugar mixture .Bake at 250 for 15 mins until golden brown on the top .
Apple Juice Chicken Wings;
1 pkg chicken wings pre cooked
1/4 cup brown sugar
1 tsp garlic powder
1/2 tsp ginger
1/4 cup soy sauce
1/2 cup apple juice any kind
3 tbs ketchup
Combine sugar ,garlic soya sauce , apple juice and ketchup in a bowl .Place cooked chicken wings in a baking dish and spread mixture over the top . Bake at 350 for about 15 mins .
Honey Mustard Chicken:
1/4 cup Dijon mustard
1/4 cup honey
1 tbsp chopped dill
1 tbsp orange zest
5 chicken breast cooked
Mix mustard , dill , orange and honey .
Pour over chicken and bake at 350 for 45 mins in a casserole dish .
Hot and Spicy Chicken :

3 tbsp chili powder
3/4 cup red wine
2 tbsp horseradish sauce
1 tbsp garlic
1 tsp salt
4 pre cooked chicken breast can be diced
Mix everything together except the chicken breast .Place in to a casserole dish and pour over chicken ,Place in the fridge and marinade for 2 hours .Bake at 350 for 45 mins .
Bacon Wrapped Chicken Balls :

4 cooked and diced into cubes
2 pkgs bacon lightly cooked not crisp ( I used turkey bacon)
1/2 cup brown sugar
1 tbsp chili powder
1/4 tsp cumin
tooth pics soaked in water
Preheat oven to 350 degrees
in a large bowl mix brown sugar , chili powder and cumin.Take a piece of chicken wrap a slice of bacon around it , secure with a tooth pick next roll the chicken into the sauce mixture . When done place on a cookie sheet lined with parchment paper and bake for 25 to 30 mins until crispy.
Garlic Chicken Wings:
1 large package of chicken wings about 2 pounds
2 tsp garlic powder
1 tbsp onion powder
3 tbsp brown sugar
1 tsp honey
Place chicken wigs in a caserole dish set aside.mix all together in a bowl pour over chicken wings in a caserole dish let marinate for about 2 hours .Bake for 350 degrees for 1 hour .
Chicken Pot Pie :

5 chicken breasts boiled for 10 mins
1 bag of mixed vegetables
1 can of cream of chicken soup
1 10 inch double pie crust will a crust for the top dice chicken breast into bite size bits combine all ingredients into a large bowl next pour into pie shell and cover with second pie crust .Pinch along the edges to prevent it opening when baking. Bake at 350 for 20 to 25 mins until golden brown .
Glazed Cornish hens:

4 to 5 cornish hens
1/4 cup maple syrup
3 tbs dijon mustard (OR regular mustard)
3 tbsp sage fresh or dried
salt and pepper to taste
Cut hens in half through the breast bone and lay flat in a casserole dish .Next in a bowl mix rest of the ingredients together then brush the mixture on the top of the hens .Bake at 350 for about 20 mins and reapply left over mixture bake for another 2o to 25 mins.This glaze can be used on chicken, duck, pork or beef.
Maple and Cranberry Glazed chicken :

8 chicken breasts
salt and pepper to taste
1 cup maple syrup
1 cup chicken stock or cubes
1/4 cup oil
1/2 cup cornstarch
1/4 wine white
1/4 cup rice vinegar or regular vinegar
1 1/2 cranberries diced or in a blender
1/2 cup brown sugar
In a bowl put in cornstarch and coat the chicken breasts if more cornstarch needed just add.In a skillet add oil , maple syrup chicken stock , wine , vinegar and cranberries . let it come to a boil .In a casserole dish place chicken in it and pour the sauce over the top. Bake at 350 covered for about 30 mins , for the last 30 mins remove the lid and cook for another 3o mins .

Doritos Chicken Casserole;
3 cups of diced cooked chicken
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1 can cream of mushroom soup
1 cup low sugar yogurt or sour cream
1 bag of Doritos crushed
1/2 cup milk
1/2 cup water
1 cup mixed vegetables or peppers optional
Turn oven to 375 for 25 mins or until crispy on top. In a bowl mix chicken yogurt, water, soup , milk and vegetables.
In a casserole dish sprinkle half of the crushed Doritos on the bottom then pour in chicken mixture . Add grated cheese over the top and sprinkle with additional Doritos. Enjoy

Popcorn Chicken:
2 chicken breasts, diced
2 tablespoons flour
1 teaspoon garlic powder
1 tsp parsley
1 cup buttermilk
1 cup breadcrumbs
oil for frying about 1 to 2 cups
instructions:
In a pot pour in oil put on medium heat
In a bowl mix parsley, flour and garlic powder
In second bowl Buttermilk
In 3 bowl add bread crumbs
Add chicken to flour mix
Next dip in buttermilk buttermilk
Last dip in bread crumbs until well coated
Fry 3-4 mins until golden brown
