Cookies:

Red Velvet Cookies :

2 1/2 cups flour

1 tsp baking soda

1 cup white sugar

1 tbsp cornstarch

1/2 cup brown sugar 1 egg

2 tsp vanilla

1 egg

1/4 cup oil

1 tbsp red food Colouring

1 cup dark or white chocolate chips

2 1/2 tsps cocoa powder

Mix sugar , oil , vanilla and egg mix well .

Add dry ingredients to the mixture stir well then drop by the spoonfuls onto cookie sheet . Bake at 350 for 8 to 10 minutes.

Stained Glass Cookies :

Stained glass cookies

1/3 cup sugar

1/3 cup butter

2/3 cup honey

1 egg

1 tsp vanilla

1 tsp baking soda

3 cups flour

About 30 hard candies clear in colour

Large and small cookie cutters

Preheat oven to 350

In a bowl cream butter and sugar , then add honey vanilla . Mix well then add flour and baking soda, Separate different colour candies , place in baggies and crush the candies . Set aside . Take cookie dough and roll out to about 1/4 inch thick , use the large cookie cutters to cut out centre of cookies and place on parchment paper bake for 5 mins remove from the oven sprinkle in the crushed candies in the centre . Bake for about 5 more minutes until golden brown and the candies have melted .

Chocolate Shortbread Cookies :to about 1/4 inch thick

1 cup sugar

1 1/2 cups icing sugar

1 tsp vanilla

1/2 tsp salt

1 1/4 cup flour

1/2 cup cocoa dark powder

1/3 cup cornstarch

Cream butter and sugar until smooth , add Salt , vanilla and cornstarch blend well.Next add flour and dark cocoa mix well ,roll into balls .

Place on parchment paper about an inch apart , flatten with a fork rub the fork in flour to prevent sticking to your dough, and press down on the balls . Bake at 350 for 10 to 15 minutes. Makes about 3 dozen depending on the size of your balls .

Gingerbread cookies

1/2 cup butter

1/2 cup molasses

2 1/2 cups flour

1/4 cup water

1 tsp baking soda

1 tsp salt

3 tsp ginger

1/2 tsp allspice

1/2 tsp cloves

1 tsp cinnamon

1/2 tsp nutmeg

1 tap cinnamon

Cream butter and sugar next add molasses and water . In a separate bowl combine all dry ingredients stir well then add wet ingredients to the dry mix well until dough forms .Chill for 2 hours in fridge .after its chilled roll out dough to about 1/4 inch thick . You can use cookie cutters to add shapes . Preheat oven to to 350 degrees bake for about 11 to 15 minutes .

Red Velvet cookies :

2 1/2 cups flour

1 1/2 cups sugar

1 egg

1/4 cup vegetable oil

1tbsp red food colouring

1 tsp vanilla

1 tbsp red food colouring

1 cup white chocolate chips or dark

2 tbsp cocoa powder

In a bowl mix sugar , oil , red food dye , eggs . Vanilla, mix well then add dry ingredients to the mixture mix well . Stir in chocolate chips , drop by the tablespoons onto a baking sheet bake at 350 for 8 to 10 minutes .

Molasses Cookies :

3 1/2 cups flour

1 tsp ginger

1 tsp cinnamon

3/4 cup molasses

3/4 cup sugar

1 egg

1 1/2 tsp baking soda

1/2 cup hot coffee

In a large bowl combine flour ,sugar,ginger ,cinnamon, molasses ,butter and egg.Mix well , in a cup add baking soda to hot coffee stir well then add to the rest of the ingredients . Bake at 375 for 10 to 12 minutes .

Raspberry jam thumbprint cookies :

2/3 cup sugar

1 cup butter

2 eggs

About 1/2 cup of jam any kind

1 tsp vanilla

2 1/4 cups flour

Preheat oven to 350 sp cloves

Cream butter sugar and eggs until smooth, add vanilla and eggs .mix in flour until well mixed . On a cookie sheet roll balls and squish with your thumb add jam to the top .Bake for 10 to 15 minutes until lightly browned .

Fruit cake cookies :

3/4 cup butter softened

1/2 cup sugar

1/2 cup brown sugar

1/4 cup molasses

1 egg

2 cups flour

1 1/2 tsp cinnamon

2 tsp baking soda

1/2 tsp cloves

1/2 cup diced cherries

1/2 cup diced dates

1 1/2 tsp ginger

1/2 cup mixed fruit peel

1/2 cup almonds (optional )

In a bowl mix sugars and butter and molasses together blend well. Next add in egg .Combine in all dry ingredients to wet mixture blend well .Fold in fruits and nuts .Cover and chill over night in the fridge .Preheat oven to 350 roll into balls place onto cookie sheet about 2 inches apart on parchment paper press down with a spoon .Bake for 10 to 12 minutes . Allow to cool before removing from cookie sheet .

Salted Carmel Rice Krispies bars :

4 cups mini marshmallows

3 tbsp butter

6 cups Rice Krispies

About 20 to 25 Carmel’

1 1/2 tbsp heavy cream

In a microwave bowl mix butter, marshmallows heavy cream and caramels for about 65 sec or until melted . Or on stove top on low heat until melted , when melted stir in marshmallows. Spread in a creased dish and they are ready to eat .

Oatmeal orange cookies :

1 cup sugar

2 tsp baking powder

1/2 cup oil

1egg

1/2 cup milk

1 1/2 cups oatmeal uncooked

1/2 cup raisins optional

2 tbsp grated orange rind

1 1/2 cups flour

In a large bowl mix flour , baking powder, egg , milk and oatmeal .Stir in orange and rest of the dry ingredients .Drop by the spoonfuls onto parchment paper or greased cookie sheet . Bake at 350 for 10 to 13 mins.

Peanut Butter Cookies :

3 1\2 cups power sugar

4 oz cream cheese

1 tsp vanilla

1\2 cup butter

1\2 cup peanuts optional

4 chocolate squares and 2 tbsp butter

Mix first 5 ingredients together until creamy In a sauce pan on lo heat melt butter and chocolate squares together. Keep on lo heat .Shape mixture into balls or cookies place in fridge until they harden.Dip balls or cookies in chocolate place on a tray ready to eat .

Date squares. :

1 cup hot water

1 cup chopped pitted dates

1/4 cup oil

3/4 cup sugar

2 large eggs

1 3/4 cup flour

1 tbsp cocoa

1/2 tsp cinnamon

1/2 tsp cloves

1 tbsp lemon juice

Pour hot water over the dates let them stand.In a bowl cream oil ,sugar and eggs . Sift in cocoa and spices and flour.Drain dates and add to mixture and lemon juice. Put in a greased baking dish bake at 350 for about 30 mins

Chocolate coconut cookies:

1 cup graham wafer crumbs

1/4 cup butter

melt butter and mix in with the crumbs and press into a square dish .

1 cup chopped nuts do not matter what kind

1 cup chocolate chips

1 can sweetened condensed milk

1 cup coconut

Mix together nuts , chips and coconut and pour over graham wafer crumbs .Next pour condensed milk over the top and bake at 350 for 15 to 20 mins .

If you do not have any condensed milk here is the recipe :

1 cup hot water , 1/4 cup butter , 4 cups powdered sugar and 2 cups sugar beat until smooth .

Chocolate chip cookies :

3/4 cup oil

1 egg

2 tbsp milk

1 3/4 cup flour

1 cup chocolate chips

1 tsp baking Soda

1 1/4 cups brown sugar

1 tsp salt

3/4 tsp vanilla

Mix oil , sugar , milk, and vanilla mix until creamy. Beat in egg , next add flour baking soda . When well mixed add chocolate chips .bake at 375 for 8 to 10 mins top will be a little moist let cool . . Yields about 24 cookies

Snowballs:

1 cup milk

1/4 cup butter

1 tsp cocoa

2 cups sugar

3 cups rolled oats

1 cup coconut

In a saucepan boil milk , butter , until melted , let cool when cooled add rolled oats , cocoa, and coconut . Roll into balls then roll into balls

Peanut butter balls :

1 cup peanut butter smooth

1 cup rice crispy

1 tbsp butter

1 cup icing sugar

1 tbsp baking powder

1/2 cup walnuts ( optional)

4 chocolate squares

2 tbsp grated para wax

Mix peanut butter , rice crispy , icing sugar , and butter.( nuts) and shape into balls then chill for 2 hours. Melt para wax and chocolate squares, coat the balls into the chocolate and para wax mixture . Drain on wax paper

Oatmeal raisin cookies :

1 cup butter

2 eggs

1 1/2 cups brown sugar

1 tsp vanilla

2 1/4 cup rolled oats

1 cup raisins

1 cup chocolate chips

1 tsp baking soda

1 tsp salt

Mix butter and sugar together until creamy then add eggs and vanilla. Add flour , baking soda , rolled oats , salt raisins , chocolate chips mix well drop by the spoonfuls on to a cookie sheet lined with parchment paper . Bake at 350 for 10 to 12 mins .

Pineapple balls:

1/2 cup butter

1 /2 cups icing sugar

1 3/4 cup coconut

1 can of diced pineapple

1 cup crushed graham wafers

Mix together butter icing sugar , and coconut , if it is to hard of a mixture then add some pineapple juice next take 1 chunk of pineapple and form a ball around it . Then roll in graham wafers crumbs continue until all balls done .

Oreo cookies:

2 boxes of chocolate cake or 2 homemade chocolate cakes

2/3 cup oil

4 eggs

Mix all together cake mixes , oil and eggs roll into balls do not press bake at 350 for 10 mins then let cool .

Icing :

1 pkg cream cheese

3 or 4 cups icing sugar

1/4 cup butter

Mix all well together spread between layers when cooled .

Rice crispie cookies:

very quick and easy

7 cups rice crispy

1/4 cup butter

40 large marshmallows

Microwave the marshmallows and butter for 78 seconds in a plastic bowl works the best , in a greased dish I uses a lasagna pan , then stir in the rice crispy smooth over the top with a spoon ( let the spoon sit in hot water )

Add chocolate chips or m&m’s even mini easter eggs just to give them a little difference

Rocky road bars:

1/2 cup butter

1/2 peanut butter

1 box chocolate squares (approximately 8 squares )

1 cup coconut

1/2 cup rice crispy

1/2 cup chopped nuts

1 bag miniature marshmallows

In a sauce pan melt butter , peanut butter , chocolate squares let cool for 1 hour . Add in coconut , rice crispy , marshmallows and nuts . Lightly grease a lasagna dish or any square pan press mixture into the pan and sprinkle the top with coconut .

If you like cherries chop some up small and mix them throughout

Shortbread cookies:

1 /2 cup cornstarch

1/2 cup icing sugar

1 cup flour

3/4 cups butter

Mix all together, I use my hands it’s messy . Roll in to little balls and flatten with a fork . Bake at 350 for 10 to 12 mins .
