Clam Chowder:
1 Can of Clam Chowder don’t drain water
3 large diced potatoes
1 Can of Carnation milk
1/4 teaspoon celery salt
2 tablespoons of flour
1 diced onion
Cook bacon ,drain clams but save the water .In a pot add clam chowder water and water enough to make 2 cups .Add potatoes and salt bring to a boil , combine flour and milk to chowder .After potatoes are tender add to clam chowder mixture .Stir constantly until thick then serve .
Brown Sugar Salmon:
juice of 1 lemon
1/2 cup brown sugar
1/2 cup miracle whip
1/4 tsp garlic powder
1/4 tsp onion
salt and pepper
On a cookie sheet place salmon skin side down and spread a thin layer of miracle whip over the top .Sprinkle garlic , onion , salt and pepper over the top.Squeeze lemon juice over the top . Place a layer of brown sugar over the top .Let marinate for two hours .Bake at 350 for for 30 mins or until the salmon flakes apart .
Tuna Quiche :
1 egg white
3 tbsp flour
1 1/4 cups milk
1 can tuna drained
1/2 tsp cayenne pepper
1/2 tsp paprika
1 pie shell
1 cup grated cheddar cheese
1 tbsp onion diced
In a bowl beat egg white until fluffy add flour, milk , cayenne and paprika. Place drained tuna in the pie shell spread cheese and onion over pie shell. Add mixture over the top. Bake at 350 for 1 hour.
Stuffed Sole:
1 lb sole fillets
1 cup bread crumbs
1 can diced tomatoes
1/4 cup water
1/2 tsp basil
1/2 tsp poultry seasoning
salt and pepper to taste
1 tbsp onion powder
Grease a baking tray lay half of the fillets in the pan .Combine all ingredients except sole in a bowl drizzle a layer over the top of the fillets .Lay the remaining fillets over the top and pour rest of the sauce mix over the top. Bake in a covered with tin foil at 350 for 40 mins to an hour .
Lemon Fish Sauce:
1/4 cut miracle whip
1 tsp lemon grind and 1 tsp lemon juice
3 tbsp flour
1 cup milk
1 tsp chopped parsley
In a sauce pan mix flour , miracle whip and milk over medium heat until thickened. Next add lemon juice , lemon rind and parsley .Pour over cooked fish
Fish Batter;
Ingredients
3/4 cup flour
1/4 tsp baking soda
1/2 tsp baking powder
2 tbsp cornstarch
Salt and pepper to taste
3/4 cup warm water
Directions:
Sift all dry ingredients together, slowly add water while mixing .
Place fish fillet in with the batter , coat well on both sides .
Deep fry until golden brown . Depends on the size of the fillet 7 to 10 mins .
Crab Cakes:
1/4 cup melted butter
1 lb of cooked crab meat
2 eggs
1/4 cup water
1/4 tsp cayenne pepper
2 cups bread crumbs
salt and pepper to taste
Mix crab ,butter,salt , pepper ,cayenne and 1 egg .When mixed shape in to cakes .In a separate bowl mix egg and a 1/2 water dip cakes in it .In a separate bowl put bread crumbs in , after dipping the cakes in the egg mixture place in the bread crumbs and cover completely . Next deep fry or place in a frying pan cook until crispy .
Cod Au Gratin:
2 pounds of cod
2 tbsp onion or onion powder
3 tbsp butter
3 tbsp flour
1/4 cup grated cheese mozzarella cheese
1 cup milk
2 tsp lemon juice
salt and pepper to taste
Place cod fillets in the bottom of a casserole dish sprinkle with salt and pepper , onions , lemon juice and 2 tbsp water .Bake at 400 for about 15 mins . In a sauce pan let simmer milk , cheese , lemon juice , and butter .until creamy . Pour over fillets and bake for an additional 20 mins .
