Muffins:

Blueberry Banana Muffins:

3 eggs

2 cups sugar

1 3/4 cup butter

3 mashed bananas

4 cups flour

2 tsp baking soda

2 cups blueberries

1 tsp vanilla

1 cup milk

1 tsp flax seed (OPTIONAL)

3 tsp baking soda

Cream butter ,sugar , eggs and vanilla. Add mashed bananas , flour , baking soda and baking powder mix well.A dad flax seed. Lastly add milk when mixed stir in blueberries . Fill muffin cups 3/4 full and bake at 350 for 20 to 25 minutes.

Quick breakfast muffins

12 eggs

1/4 cup milk

1/2 cup grated cheese

Diced cooked bacon /ham

Optional spinach , peppers

Mix eggs , milk together until blended , stir in cheese and other additives. Pour into greased muffin tins bake at 325 for 25 minutes.

Chocolate Chip Oat Muffins:

1 1/2 cups boiling water

3/4 cup packed brown sugar

1 1/4 cups rolled oats

1 1/2 cups flour

1/4 cups sugar

2 tsp baking powder

1 tsp baking soda

2 egg whites 1 tsp cinnamon

1/4 cup purée pears

1 tsp vanilla

1/2 cup chocolate chips

1/4 cup melted butter

In a pot boil water add oats mix well then set a side .

In a large bowl combine all dry ingredients , in a separate bowl mix all the wet ingredients then combine oats and mix well .

Stir in chocolate chips .Preheat oven to 350 scoop by the spoonfuls into muffin tins bake for 25 minutes or until the top is brown .

Cottage Cheese Muffins :

1 tsp baking powder

1 tsp baking soda

1 3/4 cup flour

1/2 cup butter or margarine

3/4 cup brown sugar

1 egg

1 cup cottage cheese

3 tbs  milk

Mix all ingredients together don’t over mix .Grease muffins tins or use muffins liners .Fill them about 1/2 full bake at 350 for 15 to 20 mins.

Chocolate  Chip Muffins :

2 cups flour

1 tbs sugar

1 tsp baking powder

1 tsp baking soda

1 egg

1 cup milk

3 tbsp butter melted

1 cup semi sweet chocolate chips

Mix all the ingredients together except for the chocolate chips .when mixed add chips then drop by the spoonfuls into muffin lined tins .Bake at 350 for 15 to 20 mins.

Bran Muffins :

1/2 cup brown sugar

1/2 cup softened  butter

1 tsp baking soda

1 tsp baking powder

1 egg

1 cup sour skim milk  or (1tbsp vinegar add to regular milk )

1 3/4 cups flour

1 cup bran cereal

Cream butter , egg and sugar .

In a separate bowl mix all the dry ingredients together .Add the two mixtures together .Fill the muffin tray 1/2 way upin a greased muffin tray.Bake at 350 for 15 to 20 mins.

Banana Oat Muffins:

1 cup flour

1 1/4 cup rolled oats

2/3 cup sugar

2 tsp baking powder

1 tsp baking soda

1 large egg

1 tsp salt

4 large bananas mashed

1/2 cup melted butter

Mix egg , butter and bananas mix well .Add banana mixture to all dry ingredients .In a greased muffin tin or muffin liners fill 3/4 full of mixture Bake at 350 for about 20 to 25 minutes until golden brown .I add 1/2 cup chocolate chips .I’m a chocolate lover .

Cinnamon Muffins :

2 tsp cinnamon spice

2 1/3 cup brown sugar

1/4 cup melted butter

1 tsp vanilla

2 eggs

1 tsp baking powder

1 tsp baking soda

2 cups flour

1 cup sour milk ( if you don’t have any I will put recipe at the bottom of page)

Mix cinnamon and 1/4 cup brown sugar set aside .

Mix together butter,1 cup brown sugar, eggs, and vanilla, next add in flour , baking soda ,baking powder and sour milk mix well.lightly stir in cinnamon and brown sugar .Pour into cup cake pans fill 3/4 full bake at 350 for 18 to 20 mins .

How to make sour milk : in a bowl add 1 cup of milk and 1 tbsp lemon juice or vinegar to make the milk sour it takes about a min.Then add to recpie .

Red Velvet Muffins;

RED VELVET MUFFINS BEFORE ICING

Icing recpie at the bottom

1 cup whole milk

1/2 cup butter

2 eggs

2 tbsp red food colouring

2 tbsp cocoa powder

1 tbsp vanilla

2 1/2 cups flour

1 tbsp baking powder

1/4 cup oil

1 1/4 cup sugar

Mix eggs , butter , sugar and vanilla together until creamy. Next in a separate bowl add in oil , cocoa powder , flour , baking soda and milk and food colouring mix well . Add both mixtures together stir well using muffin liners or a greased muffin tins .Bake at 350 for 13 to 15 mins or until the cake tester stick comes out clean .When cooled poke hole in the top of the muffins with the end of a wooden spoon , then fill up the hole with icing and the top of muffins . Makes about 24 muffins .Which is good cause my kids love them .

Icing ;  2 cups icing sugar , 1 tsp vanilla  and 1/2cup butter  mix well and if it is to thick add couple tsp water  .

Cream cheese frosting : 8 oz of cream cheese softened ,1/4 cup butter softened , 2 cups icing sugar, 2 tbsp milk and 1 tsp vanilla. can be doubled .

Mom’s Strawberry – Rhubarb Muffins:

1 cup diced frozen rhubarb

3 tbsp cooking oil

1 egg

1 cup frozen strawberries

3 tsp baking powder

1/2 cup sugar

2 cups milk

2 cups flour

Mix egg , milk , oil stir well then add baking powder , sugar and flour continue stirring slowly add rhubarb and strawberries .In a lined muffin tins pour at least 3/4 full of batter . Bake at 375 for 20 mins out until cake tester comes out clean .

Baking Powder Biscuits :

2 tbsp baking powder

2 cups flour

1/4 cup shortening or butter

3/4 cup milk

dash of salt

In a bowl mix flour , baking powder and salt and rub shortening in to the flour with your hands. Add milk slowly a soft will form . Roll onto a floured surface until about a 1/4 inch thick then cut with a biscuit cutter or a glass will work . Bake at 350 for about 15 t0 20 mins. My dads favourite buns after we added 1 cup of raisins.

Cow Pies

2 cups milk chocolate chips

1 tbsp cooking oil

1/2 cup raisins

1/2 cup slivered almonds

In a double boiler over simmering water, melt the chocolate chips and oil, stirring until smooth. Remove from heat; stir in raisins and almonds. Drop by tablespoonfuls onto waxed paper. Chill until ready to serve.
