
Cheese balls:
1tsp salt
1 tsp paprika
1 well beaten egg
1 slightly beaten egg
1/4 cup butter melted
1 cup milk
1 3/4 cup grated cheese
1/2 cup bread crumbs
In a large bowl mix butter , flour , salt,milk, and paprika.Let simmer over heat until cheese is melted , let cool . In a separate bowl mix well beaten egg and cheese in a bowl. When chilled roll into balls then roll balls in the egg mixture and crumbs . Deep fry in hot oil until browned .
Home made Macaroni and Cheese :

3 cups macaroni
2 1/2 cups grated cheddar cheese
1/2 cup bread crumbs
1/2 cup milk
3 beaten eggs
chopped peppers ( optional ) or anything you like
Cook macaroni and drain mix eggs , milk and bread crumbs .In a greased dish add a layer or cooked macaroni then a layer of cheese repeat until all macaroni is added and covered with cheese .Pour egg mixture over the top and bread crumbs on top of egg mixture . Bake at 350 for 20 minutes covered or until egg is cooked .
Scalloped Potatoes :

6 large potatoes peeled and sliced
1 onion diced
salt and pepper
1 cup grated cheddar or mozzarella cheese
1 can cream of mushroom soup
1 cup diced bacon or bacon bits
1 cup milk
1 cup water
1 tsp chives
1 shredded carrot
Place a layer of sliced potatoes in the bottom of a casserole dish.Combine all ingredients in a large bowl .Pour some over potatoes slices then repeat until all potatoes.Bake at 350 for 45 mins or until potatoes are soft.
Stuffed Zucchini :

2 medium zucchinis sliced in half and scooped out
1 tomato diced
1/2 cup peppers red ,yellow or green
1 cup rice cooked
3 tbsp melted butter
1/2 cup cheddar cheese
1 cup stuffing (homemade or stovetop)
Mix all ingredients together except for zucchiniStuff zucchini with the mixture then drizzle melted butter over the top add salt and pepper to taste .Bake at 375 for 15 mins
Roasted potatoes :

8 medium size potatoes diced and partially boiled
1/2 cup cooking oil
salt & pepper
1 cup cooked bacon diced
cheddar cheese to sprinkle over the top
1 tsp of paprika, garlic , chives, garlic and onion powder
Mix spices and oil in a bowl throw in partially boiled potatoes.Sprinkle with cheese Bake at 400 for 10 or 15 minutes until browned .
Broccoli Cheese Casserole:

1 bunch of broccoli diced
2 cups of rice uncooked
1 can of cream of mushroom soup
1 cup grated mozzarella cheese
1 cup bread crumbs ( optional)
3 cups water
In a bowl mix water and cream of mushroom soup then add uncooked rice , bread crumbs and broccoli. Bake at 350 for 45 mins . I sometimes add carrots ,potatoes or any other veggie that you like.
Baked beans :

1 lb white beans soaked overnight
1 diced onion
2 tsp vinegar
1 tsp mustard
1 cup cooked bacon diced
2 tbsp brown sugar
3/4 cup ketchup
1/2 cup dark molasses
salt and pepper to taste
Mix vinegar , mustard ,brown sugar , onion ,ketchup and molasses together in a bowl then pour over the top of beans add bacon to top of beans .Cook for about 5 hours .
Broccoli Stuffed baked potatoes:

4 tbsp butter
6 large potatoes
1 1/2 cups broccoli
3 tbsp ranch dressing
salt and pepper
added cooked bacon to one
In microwave cook potatoes for 10 minutes always poke holes in the potatoes before microwaving.When baked remove from micro and cut around the top of potatoes ,so they can be scooped out .Put all the cooked potato pulp in a bowl mix in butter salad dressing and broccoli .Salt and pepper to taste . Fill up the potato skins with the mixture.Then place on a cookie sheet and bake for about 10 mins on broil.
CHEESE SOUFFLE:

1 1/2 grated cheese
3 eggs seperate eggs and yolks
1 cup thick sauce (recpie will be at the bottom)
Add cheese to the white sauce and stir over medium heat until cheese is melted .Next add the beaten egg yolks . In a seperate bowl add in the stiffly beaten egg yolks then stir into mixture on the stove .Pour in to a greased casserole dish .For best results place the dish in another pan of warm water and bake for 50 mins at 350.
White sauce recpie:1 cup milk , 2 cups flour , 2 tbsp butter stir in together on medium heat until thickened then good to use.
Bacon and Cheese Quiche:

1 package bacon or turkey bacon works too cooked and diced
3 eggs
1 cup milk
1 cup grated cheese
salt and pepper to taste
1/4 cup parmesan cheese
1 unbaked pie shell
In the bottom of the pie shell sprinkle cheddar cheese and bacon.In a mixing bowl beat eggs and milk together then pour over bacon and cheese.Sprinkle salt , pepper and parmesan over the top.Bake at 350 for 40 to 45 mins .Let stand for 10 to 12 mins .
Stuffed Mushrooms:

8 large mushrooms stem removed and saved
1 diced onion
1 tsp garlic powder
1/3 cup water
1 cup bread crumbs
4 tbsp Parmesan cheese
salt and pepper to taste
5 strips bacon cooked and diced (or bacon bits)
1 tbsp parsley
1/2 tsp poultry seasoning
Boil mushrooms , onion , garlic powder and water simmer for about 5 mins. Remove from heat add bread crumbs , cheese ,parsley , poultry seasoning , salt , pepper .Stuff mushroom caps with mixture bake on a cookie sheet sprinkle with diced bacon .Bake at 350 for 20 mins .
Glazed Mini Carrots :

1 bag of mini carrots
1/4 cup butter
1 tsp ginger
1 tsp onion powder
1/4 cup lemon juice
2 tbsp honey
Boil carrots over medium heat until tender about 7 to 10 mins drain . Place pot on the stove over medium heat then add ginger , butter onion powder , lemon juice and honey .Return carrots to the pot stir to coat the carrots let simmer for about 3 mins then serve .
Roasted Asparagus :

1 lb of asparagus trim the stems
1/4 cup of oil
1/4 cup diced peppers any kind
salt and pepper to taste
1 tbs vinegar
Cook asparagus in boiling water for about 2 mins drain then dip in ice water and drain . In a casserole dish place asparagus side by side .In a bowl mix up oil , vinegar and salt & pepper then drizzle over the asparagus bake at 400 for about 20 mins
Devilled Eggs :

1 dozen eggs hard boiled eggs
4 tbsp mayo ( any kind )
2 tsp paprika
3 tsp mustard
salt and pepper to taste
1/8 tsp cayenne pepper
Cut eggs into halves and scoop out all the yolks into a bowl , add mayo , mustard , cayenne pepper and salt & pepper . Mix well together , after well mixed put the mixture into the scooped out egg whites . After all the eggs are full sprinkle paprika over the top of eggs .
Egg & Potato Roll:


8 to 10 potatoes boiled
6 to 8 eggs hard boiled
salt and pepper to taste
1 diced onion
3 tbs butter
1/2 cup mc whip
diced peppers ( optional)
Mash boiled potatoes with 2 tbs butter, onion and 1/2 cup mayo .In a separate bowl mash eggs with 1 tbs butter .Lay saran wrap on the counter place mashed potatoes on the saran wrap spread out so its 1/4 inch thick. Add egg mixture on top of the potatoes spread it out .Next take one edge of the saran wrap and begin to roll it up .When done tuck in the ends of the wrap place in fridge until cool .Unroll Slice and serve .
Stuffed Cucumbers :

4 medium cucumbers middles scooped out
1 cup cottage cheese drained
1/4 cup margarine or butter
1 tbsp diced chives
1 beef bouillon cube
1/2 tsp Worcestershire sauce
Ritz crackers or another different kind
Combine cheese , butter, chives, beef cube and Worcester in a bowl mix well.Next stuff the cucumbers with the mixture.Chill for 2 hours , then cut into slices and serve with crackers .
Baked Squash:
1 medium yellow squash or butternut squash
2 tbs melted butter
salt and pepper
Cut squash in half lenghtwise remove the seeds from center.
Place on a dish in the microwave for cut side up , put butter and salt and pepper in the center cooked for about 7 to15 mins on high until they soften. If baking in the oven 350 for about 30 mins until tender.
(If you want it sweetened up up add 2 tbs brown sugar)
Chicken Strips with Honey Mustard Sauce :

1/4 cup oil
3 tbsp mayo
3 tbs honey mustard
3/4 cup cornmeal
1 cup bread crumbs
4 tbsp honey
6 chicken breasts cut in strips
In a bowl mix mustard and and mayo mix well , then in a separate bowl mix the cornmeal , bread crumbs stir until mixed. Use the oil to spread out on a cookie sheet or baking dish , take a strip of chicken breast , first place in the mayo and mustard mixture coat well. Take the strip then roll in into the bread crumb mixture continue with the rest of the chicken breasts are covered . Preheat oven to 350 bake 15 mins on one side then turn over and cook 15 mins on the other side . I use the rest of the left over sauce and pour over the top on the second time baking . Cook until chicken is completely cooked. If you want dipping sauce I make 2 tbs of honey mustard sauce and 2 tsp honey , stir well .
